Happy Monday everyone! Here is a meat free recipe to ease you into this week. Lentil Babotie is a quick and easy vegetarian recipe, making it a convenient, environmentally friendly start to your week. 2 x 400g tins of lentils (drained)
1 onion (thinly sliced)
1 handful of raisins
1-2 teaspoons of medium curry powder
Dash of milk
oil for sautéing ingredients
1-2 tablespoons of bread crumbs
Turn oven on to 180 degrees Celsius. Sauté onions in a bit of oil with the curry powder for a minute or two. When the onions are starting to get soft, add the lentils and raisins to the saucepan and mix well. The mixture needs to be quite firm, so add a tablespoon or so of breadcrumbs to bulk it up and mix well. In a separate bowl, crack two eggs and add a tablespoon of milk. Whisk with a fork to create an egg custard.
Put the lentil mixture into a roasting dish and cover the top with the egg custard. Place in the oven for 15-20 minutes (until the egg is browning/bubbling).
Serve with rice, chutney and a variety of sambals eg tomato and onion or cucumber and yoghurt and enjoy this vegetarian recipe in celebration of Meat Free Mondays.
