Here we are faced with another Monday, and another day to play our part in conserving the planet. Engaging with the Meat Free Monday movement is an easy way to cut-down your meat-consumption, and in turn reduce, ever so slightly, your carbon footprint (for the uninitiated, meat farming is one of the most destructive, inefficient forms of food production out there). Here is an easy meat free recipe for butternut lasagne.
Ingredients (serves 4)
- 500g peeled butternut chunks
- 2 tins of whole Italian tomatoes
- 2 big cloves of garlic
- ½ teaspoon of dried oregano
- Salt and pepper for seasoning
- 6 fresh lasagne sheets
- Large handful of basil
- 100g goat’s milk cheese
- 125ml thick cream
- 80g grated parmesan cheese
- Olive oil
Method
Bring butternut, garlic, tomatoes, oregano and seasoning to the boil. Then, reduce the heat and simmer until the butternut is soft. Once it is soft, roughly mash the mixture, checking that the seasoning is doing the trick. If you’re happy with the taste, oil a baking dish with olive oil and line the bottom with sheets of lasagne. Then spoon in some of the sauce and torn basil leaves on top. Grate some goat’s cheese over the top. Place another layer of lasagne on top and repeat the process. The last layer should be covered with lasagne, pour cream over this top layer and grate parmesan on top (plus some more seasoning if you like). Finally, drizzle a little olive oil over it and place in the oven at 180 degrees Celsius for 25 minutes.
Finally, serve and enjoy on a meat free Monday, or any other day of the week in fact 🙂
