This recipe for banana bread is like a family heirloom, handed down for generations. It comes from a granny’s days as a young house-wife, writing out her recipes by hand, before the days of digital. Despite its age, it still works well, tastes delicious and is the perfect way to use up those bananas that would otherwise be consigned to the compost heap.
Ingredients
3-4 bananas
1 cup sugar
120g butter
1 teaspoon vanilla essence
2 cups of flour
½ teaspoon of salt
½ teaspoon of baking powder
¾ cup of milk
½ teaspoon bicarbonate of soda
2 eggs
Method
Mash the bananas then add the sugar and the butter (slightly softened). Stir. Beat in the eggs and then add the bicarb and milk. Sift in the remaining dry ingredients, beating the mixture in between each addition. Pour batter into a well-greased loaf tray and bake on 180 degrees Celsius for an hour. Serve with butter or custard and enjoy!
